Every once in a while I'll sit back and wonder what another persons' life might be like. I contemplate the idea of a typical week or day and have to ask myself, "is there even such a thing?" It's enough that we all lead busy lives with hectic schedules. Racing around from work to school, the kids, the errands, the activities, the socializing. Add the holiday shopping and parties to all of that and it's enough to never get out of bed.

This week I find myself scrambling around work, heading to Sausalito, Sonoma and Santa Rosa to meet with clients and accounts. Hopefully I'll get in a few sessions at the gym, prepare for my weekend trip to the Foothills-including laundry, cleaning and cat preparations - and, oh yeah, the Company Thanksgiving party that I need to bring an appetizer to - enough to feed 35 completely different palettes. Um, by the way, when am I supposed to prepare anything for the latter? I'm not much of a "buy-something-frozen-or-prepared-and-call-it-a-day" kinda person (though in times like these, I truly wish I were). I've put together this appetizer that can be prepared in advance and in pieces to be compiled the day of the party or event. It is a creamy, bright and delicious appetizer that will pair well with just about any feast, wine and temperament. At the end of the day, I'm much more satisfied that I made something to show those I appreciate just how much they mean to me.

This recipe also works perfectly for a cheese and wine party and is absolutely lovely with Pinot Noir. I always have the velvety, slightly tannic Emeritus Vineyards William Wesley Pinot on-hand and it always receives praise when I serve it. The tannins cut right through the smooth creamy cheese, the earthy bite of chives and spicy bite of cracked pepper are subtly enhanced by the wines' luscious berry undertones. In no time at all, the crostini will have vanished and the wine will go dry, but both will remain in the forefront of your friends' memory.

Ingredients:

Handful of chives, chopped tiny
Crushed walnuts, toasted
1 8 oz. pkg cream cheese
1 container blue cheese crumbles
1 bunch of red grapes (well, you'll only need about a dozen single grapes)
Baguette, sliced into 1/4 - 1/2 inch slices

Directions:

These directions are intended for preparing ahead of time.

Mix together the blue and cream cheeses, store in a plastic container. Dice the chives and put them in a separate container. Put walnuts in a pan over medium heat and heat the walnuts for about 5-7 minutes, or until the toasty aroma fills your kitchen. Let the nuts cool and put them into an airtight plastic baggie. Quarter your grapes and put into a plastic container. Turn oven onto low (250 degrees), slice your baguette into approximately 1/4 inch slices. Lay the bread onto a baking sheet in a single layer and put in oven for approx 15-20 minutes, or until the bread is no longer soft. Store in an airtight container. *note, these can be made up to a week in advance as long as they are stored in an airtight container.

To assemble the day-of, swipe a dollop of the cheese mixture onto a bread slice, about 1 tablespoon. Place about 2 grape sections on top, sprinkle with chives and nuts. Turn out onto a serving tray and voila, your appetizer is finito!

Every year when it's time to send our children back to school, one of the many items we need to purchase are back to school lunch supplies. If you are looking to save money through out the year, consider investing in non-disposable products.

Here is a list of products you will need for those school lunches.

1. A good lunch bag or box. I don't recommend metal lunch boxes as they are hard to clean and can get rusty and dented over time. Invest in a fabric insulated bag that can be washed or a plastic lunchbox that can be hand washed.

You can purchase a nice bag or box for under at most stores. This is more earth friendly and more economical than using disposable paper bags.

2. Consider purchasing plastic sandwich keepers that are reusable and will keep the sandwich protected. There is nothing worse than a squished sandwich. This sandwich keeper will pay for itself within 8 weeks compared to using plastic baggies.

3. You will need some plastic snack cups or side dishes with airtight and liquid tight seals. You can pack applesauce, mini salads, fruit snacks and side dishes in these containers. I recommend picking up four of these styled containers.

4. Purchase a package of reusable forks and spoons. You can pick these up for less than .00 at most stores. Have your child bring them home every day so that they can be washed and reused.

5. You will need to purchase a reusable ice pack for each child that will be packing his or her lunch. I like to keep several ice packs in my freezer at all times, that way when one ice pack is freezing, the other one can be in use.

6. I recommend purchasing a small beverage bottle with a liquid-tight lid. I like the ones that are designed like a small sports bottle with a drinking spout. You can then send your child to school with homemade beverages or fruit juices that you make yourself or purchase in bulk.

By investing in quality reusable plastic lunch products, you will be saving money and our planet. Make your list and take your child with you when you go out shopping for these products, let them participate in selecting the fun colors that they enjoy.

Whether petticoats and pearls or sneakers and pants yoga clothing, you probably do not think I have enough time for the day to work, go to the gym, hanging with your friends or family, watch some 'TiVo and, above all, who actually make real food to eat. To be honest, you're wrong.

I know, I know! Half of the girls at my favorite place on Friday night club just threw up his hands in the air and walked on their feet. But did the greatest disservice to the modern individualWoman (or man) is the widespread promotion of an hour cooking show.

Simple Says who?

I went to the library for books two days ago with a view "simple recipes". My request was that he must have:

Images (I'll see what I'm doing before I do)
Easy to find recipes
I could not pronounce the ingredients

I came with a single book from hundreds criteria that seemed to fit my feet like a book without Dinners: deliciously simple recipes for cookingAfter Work by Caroline Marson (photos by Peter Cassidy). Let me just say, Caroline and Peter had their stuff together. Every recipe has a picture, and Caroline put together a list at the beginning of the book of what you should have in your pantry.

But something is still a little off. Who actually has a scallion at their house (or has seen one, for that matter)? Have you ever even bought fresh mint sprigs? Do you stock creme fraiche in your fridge?

Almost every recipe calls for some crazy ingredient, most of which you will throw away after you make that one dish. And what about breakfast and lunch? Are we supposed to drink Slim-Stuff drinks every day and starve ourselves until dinner? Please tell me you don't believe that. I sure as heck don't.

So kudos to Marson and Cassidy but for most of us, by the time we get home from work, take off our high heels and neck ties, and sit down on the sofa, we're more ready to reach for the remote than to go rustle up some creme fraiche.

Marson does offer one brilliant tidbit of advice: You can do a lot of your preparation ahead of time. For example, cheese, peppers, and onions make eggs an omelet. They turn breakfast poultry into a meal. But oh my lord, who wants to wake up at 7 AM to make breakfast and start chopping onions? "Not I," said the little red hen!

Back to Basics

So here is my list of things you should keep in your fridge or pantry, many of which you can prepare when you buy them so you're not fumbling around for a knife at 7 AM and accidently stabbing yourself:

Peppers - I like red and green ones, and you can store them in the same Tupperware® container. Core them and rinse out the seeds, then chop them up into single-serving sizes (about 8 chunks per pepper). I recommend not dicing them until you're actually cooking them because they keep better that way. Even though I know people say you can freeze them, just don't do it. It makes them soggy and weird when you thaw them out.

Onions - Green, red or yellow, I love onions! Each type has its own unique flavor and is particularly useful in certain dishes. Green onions can be chopped into little pieces and stored that way, and you can slice the red or yellow ones so you have rings handy. Be careful not to buy these in bulk unless you're feeding a family of six because they go bad after a week once you begin cutting on them. I store mine in Ziploc® baggies in the crisper drawer.

Say Cheese! - Real cheese. Don't you dare pass those individually wrapped pieces of "processed plastic" off on your family and friends! Maybe to a guy who you really want to get rid of but don't have the cajones to dump. But nobody who has tasted real cheese wants to go back to yellow rubber. My personal favorites (which are also sort of good for you) are feta, parmesan (in a wedge, not a canister), goat cheese, extra sharp cheddar, and aged Swiss. The stronger the flavor, the less you need to use so it's healthier and tastier at the same time. Store cheese in freezer baggies in the fridge remembering to get as much air out of the baggy as possible before you zip it up.

Eggs - A necessary ingredient in almost anything you bake, eggs are a tasty little dish all on their own or with some peppers, onions, cheese, and a little rosemary tossed in. The reason I love eggs is that they're just so darn easy to make. You don't have to think about it, you just crack the shell and dump them in the pan, or you can get all fancy-shmancy with them and beat them or make Eggy in a Basket or boil them for a handy snack.

Bread - Yes, I know, it has carbs. But if you're cooking for yourself and not going out and eating a zillion grams of greasy McBurgers every day, the 70-120 calories and 2 grams of fat in these little slices aren't going to hurt you at all. Reach for some whole wheat or whole grain bread. It will cost you a few more pennies, but you'll feel fuller than if you eat the white flour junk. If you don't like little flakes of crunchy things on your bread, opt for the whole wheat they make at the local bakery or grocery store bakery. It isn't as healthy for you, but the taste makes up for the few extra calories, and they mark the date that it was made on the package so you know it is fresh.

Healthy Butter - And this probably means no butter at all. Don't get me wrong, I love butter so much I almost hate to say this...almost. The only reason I say don't get real butter is that I actually looked at the nutrition facts on the back of my butter today and unholy cow! Something like I Can't Believe It's Not Butter light has literally half the calories and fat that real, unsalted butter has. Tear. Sniffle. Okay, I'm over it. I can have twice as much of the tasty fake stuff or eat bread with more fat and calories and not suffer an ounce from the switch.

Pam - Yes, the cooking spray. Have you ever looked on the back of a can of Pam? It reads like the Broncos standings during the second half of last year: 0, 0, 0, 0... This stuff is fantastic and has pretty much nothing in it. Please don't suggest that olive oil is better for you than Crisco, or even that Smart Omega stuff. I have bottles of all three of those kinds of oil sitting in front of me right this second and they all have 120 calories and 14 grams of fat per tablespoon! That's more fat than a Hershey's® chocolate bar! Even the extra virgin stuff! So opt for Pam and save your calories and fat for stuff that actually tastes yummy.

Spices - You may think they're expensive, and yes, they are. But think about this: It is highly unlikely you'll get through one of those little jars of spices in less than six months. If you're restocking one or two spices a month, you're only spending about on stuff to make your food really yummy. I recommend:

Cinnamon
Garlic salt
Rosemary
Lemon pepper
Oregano
Sea salt (in a grinder)
Black pepper kernels (in a grinder)
Cajun spice (or blackening Cajun spice)

Sauces and Dressings - Keep these simple and read the back of them, especially the grams of sugar. Mustard and apple cider vinegar are good on almost anything, and instead of a high-fat, high-calorie dressing, you can sprinkle on a little of the vinegar, which has a whole lot of zeroes in it.

Frequent Forays

There are a few things that you will want to buy every few days, just so they are as fresh as possible when you're eating them. These include:

Milk - Duh, right? But give up the whole milk and even 2% milk. They don't do anything special for you, and if you're not getting enough calcium have some freshly sliced parmesan, whole wheat bread, or spinach...yup. Spinach.

Meat:

Fish - My favorite, I always buy fish on sale. I can get two servings out of one package of "fresh" salmon, tilapia or trout, which means two really incredibly tasty dinners for the price of one.

Chicken - You might be more of a chicken type, and while I don't recommend freezing fish, freezing chicken doesn't seem to have any adverse effects on it. But make sure you don't forget your chicken in your freezer for months at a time.

Beef - I am also a huge fan of beef, which is super easy to cook. I always opt for very lean beef - 98 or 99 percent fat-free - and marinate it in a peppercorn sauce before throwing it on the George Foreman for a few minutes.

Greens:

Spinach - This is super healthy for you and gets rid of toxins while loading you up with vitamins and minerals. If you buy spinach fresh in the produce aisle, don't forget to wash it thoroughly, or you may get a mouthful of dirt. Spinach is going to do more for you than lettuce because it has tons more fiber and protein, but if you just can't get over your childhood fear of it, a good arugula is an acceptable substitute.

Lettuce - As for lettuce, don't even think about Iceberg. It does nothing for you except occasionally clean out your intestines in the least comfortable way possible. Romaine, arugula (which I adore), or most types of leaf lettuce are acceptable. Spinach and lettuce in particular seem to have remarkably short shelf lives, even in the crisper drawer stuffed in a freezer bag with all the air pushed out, so you'll want to pick up fresh bundles or bags of it every three days or so.

The Fun Stuff

All those bits and pieces above are good core items. You can put of them together and have a meal with almost zero fuss, but who wants a piece of chicken on plain spinach? Dare I quote the little red hen again?

So while you're at the grocery store, pick up some fun things, but watch out because they tend to be a bit pricier than the staples. Some things you might want to include this week are:

Pine nuts - use sparingly because they're fairly high in fat and calories

Almonds - great for a little snack between meals

Fruit - pair a pear, apple, or banana with a few almonds and you'll forget you ever knew what "hunger pains" were

Avocado - not my choice, but I hear they're great on sandwiches

Raisins - another one to be careful with because they have hello-high sugar content, but holy cow are they fabulous on a salad (Craisins probably do just as well), or you can do berries, peaches, or orange wedges to the same effect

Tea - iced or hot, the best way to break your need for sugary soda is by replacing it, just be careful not to sugar yourself up too much with every mug or glass full

100 Calorie Snack Packs - okay, yes, this looks like a sell-out item, but if you're just dying for little cookies, even after you've had your Granny Smith and a handful of almonds, these are the way to go

Instant Taters - yes, I know, you're going, "What? Why?" Well, simply put they are way easier to make than real mashed taters, and though they have quite a bit of sodium and carbohydrates, they have pretty much no fat, no sugar, and not too many calories

Oatmeal - in a canister, not in packets; the quick cook kind takes the same amount of time as the packets but has about 50,000 fewer grams of sugar than the packets, and if you add a little salt, some cinnamon or berries to it you'll never miss the sugar and dried fake fruit chunks

If you take your first cruise down the road, one might ask, what to pack. The first thing is to realize that you have for the first package trip flight, if you're lucky to live a short drive from the port. Everything you need to bring with you at the airport before checking luggage, and you also have to take them to the cruise terminal. Folding trolley or cart that is much easier, especially if you travel with yourChildren. Will not be long before a 50-pound bag is difficult to obtain, and that is as light packaging. The best rule of thumb is to try to just 1 piece of checked baggage, carry-to-one and one personal item. The airlines are much stricter now on the implementation of the size and if you try both with a bag and a bag or backpack to arrive, we can say that both are considered personal items and should be only one. Passport Passport photo Visa All other necessary travel documents Immunization records, if necessary Itinerary Airline tickets CruiseDocuments, already filled out Baggage & Medical Insurance & Cancellation Information Reservation Confirmations, including your hotels Rental Car or other transportation information Emergency Contact Numbers

Other essentials that can go in your purse or tote are prescription glasses, lip balm, gum or candy, tissues for tears or runny noses, band aids, sunglasses, luggage keys, eye drops, check book, pain or headache medication and a small package of wet-wipes for emergencies.In your carry-on bag, you might consider these items:

Any prescriptions or health-related items such as joint supports, dental appliances, contact lens solutions and vitamins. A water bottle filled with water. Buying one especially for the trip enables you to fill it with juice or water as you'd like on your trip and makes it easily identifiable. One change of clean clothes appropriate to what you will be wearing on your first evening aboard if you are not already wearing it (in case luggage gets lost) Swimsuit and cover-up Pajamas Jewelry in a closeable bag; it is not recommended that you bring valuables. Flip flops or beach sandals Snack or drink items (remember the airline security procedures) Notepad and pens or pencils Pack of cards or other hand-held games Address book with stamps Business or Personal Cards with your contact information to hand out to new friends Copies of everything that is in your Travel Kit above Camera, film and batteries, including an underwater camera. It's cheaper to buy before your trip than on board ship. Toiletries (place them all in a bag or shaving kit and bring along a shower hook with which to hang it. Cabin bathrooms are extremely small.) Pain Meds in original containers (i.e. Tylenol or Advil) Motion Sickness meds also in original packaging (ginger snaps, ginger ale and peppermint tea or candles also work & sea sickness pills are available at the Purser's desk onboard. Sinus/Allergy Meds in original packaging Cough Drops in original packaging 7-day pill container(s) with your RXs and vitamins Antacid like Tums or Rolaids in original packaging Anti-diarrheal medication in original packaging Waterless hand sanitizer Facial cleanser Hand and face lotion Shampoo and conditioner Deodorant Toothbrush, toothpaste, dental floss, small mouthwash Comb and brush Sun screen (minimum SPF 15) Sunburn relief like aloe Non-aerosol insect repellent Q-tips & cotton balls Small baby powder Hair fixatives Depilatories or shaving equipment (safety or disposable only) Manicure and Pedicure necessities (file, clippers, tweezers & scissors must be in checked baggage) Styptic pencil Aftershave Sanitary pads or tampons if needed Perfume Make up Reading materials such as books or magazines

Everything else can be in your checked luggage. Any valuables, like cameras and electronics should be carried on with you. You are not allowed to lock checked baggage unless you have it screened prior to checking it, so if you don't want to risk its disappearing, then carry it on.

There's a lot to remember, isn't there? It's probably best to make your own personal list and to check it off as you pack it. It also might help to annotate that packing list with where you packed specific items. For example you could make note that you packed your little black sweater in the garment bag (gb), maybe abbreviating bag names to save room, but relieving you of having to go through all the bags to find what you are looking for. You can carry the packing list in your purse, tote, diaper bag or laptop case...just remember where you put the list.
